2 Chicken breasts (minced)
1 tbsp Garlic powder
1 tbsp Onion powder
½ tbsp Paprika (optional)
Salt and pepper (to taste)
1 tbsp Cornstarch

For the Batter

¾ cup All-purpose flour
1/3 cup Cornstarch
1 tsp Garlic powder
1 tsp Onion powder
Salt and pepper (to taste)
1 tsp Baking powder
1½ cups Cold water (or as needed)

Add the minced chicken to a large bowl along with garlic powder, onion powder, paprika, salt, pepper, and cornstarch. Mix thoroughly until the seasonings are evenly distributed and the mixture becomes slightly sticky.

Line a tray or baking sheet with parchment paper. Scoop portions of the chicken mixture and shape them into nugget-sized pieces. Arrange them on the tray and freeze for about 30 minutes, or until firm enough to handle easily.

While the nuggets chill, prepare the batter. In a bowl, combine the all-purpose flour, cornstarch, garlic powder, onion powder, salt, and pepper. Reserve a few spoonful of this dry mixture in a separate bowl for dredging.

Heat oil in a deep pot or skillet to 350°F (175°C).

Add the baking powder and cold water to the remaining flour mixture. Whisk until a smooth, thin batter forms. The consistency should lightly coat the back of a spoon.
