These Chicken Caesar Salad Nachos combine everything you love about a classic Caesar salad with the irresistible crunch of loaded nachos. Instructions
- Preheat the oven to 375°F and line a baking sheet or oven-safe platter with parchment paper if desired.
- In a mixing bowl, combine the chicken pieces with 1 tablespoon of oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the chicken is evenly coated with the seasonings.
- Heat the remaining ½ tablespoon of oil in a large skillet over medium heat. Add the seasoned chicken and cook for 6–8 minutes, stirring occasionally, until golden brown and fully cooked through. Remove from the heat and allow the chicken to cool slightly.
- Arrange the tortilla chips in an even layer on a large baking sheet or oven-safe serving platter. Sprinkle the Italian cheese blend evenly over the chips and scatter the cooked chicken on top. Finish with black pepper.
- Bake for 5–8 minutes, or until the cheese is fully melted and bubbly.
- While the nachos are baking, add the shredded romaine lettuce to a large bowl. Pour in the Caesar dressing and squeeze the juice from half a lemon over the top. Toss until the lettuce is evenly coated.
- Remove the nachos from the oven and allow them to cool for 1–2 minutes.
- Top the warm nachos with the dressed romaine lettuce. Sprinkle generously with parmesan cheese and toasted garlic butter panko breadcrumbs.
- Serve immediately while the chips are still crisp and the cheese is warm.
