Instructions
- Pat the chicken strips dry with paper towels. Place them in a bowl and season with salt, pepper, garlic powder, onion powder, and paprika. Toss until evenly coated and set aside for 10–15 minutes while you prepare the batter.
- In a large mixing bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Gradually whisk in cold water until a smooth, semi-thick batter forms. The batter should be thick enough to coat the chicken while still allowing excess batter to drip off easily.
- Place the panko breadcrumbs in a separate shallow bowl.
- Working one piece at a time, dip each chicken strip into the batter, allowing any excess to drip off. Roll it in the breadcrumbs, pressing gently so the coating adheres evenly on all sides. Place the coated chicken strips on a tray while you finish the remaining pieces.
- Heat oil in a deep skillet or heavy-bottomed pot to 350°F (175°C). Carefully add the chicken fries in batches, making sure not to overcrowd the pan. Fry for 4–6 minutes, turning occasionally, until the coating is golden brown and the chicken is fully cooked through. The internal temperature should reach 165°F (74°C).
- Transfer the cooked chicken fries to a wire rack or paper towel-lined plate to drain excess oil. Allow them to rest for a minute before serving.
- Serve hot with your favorite dipping sauces such as ranch, honey mustard, barbecue sauce, buffalo sauce, or spicy mayo.

• Cutting the chicken into evenly sized strips helps them cook at the same rate.
• Cold water helps create a lighter, crispier batter.
