Description

These Chipotle Chicken Sliders are bold, creamy, and packed with smoky heat in every bite. Tender shredded chicken is mixed with a rich, spiced sauce and layered with melty cheese and tangy pickles inside soft, buttery rolls. The result is a perfect balance of spicy chipotle flavor, creamy texture, and sweet-savory contrast. Baked until warm and golden, these sliders are ideal for parties, game days, or an easy crowd-pleasing dinner.

Instructions

  1. Season chicken breasts with salt, pepper, paprika, and garlic powder. Grill or pan-cook over medium heat until fully cooked through, then shred into bite-sized pieces.
  2. In a large bowl, combine the shredded chicken with sour cream, paprika, garlic powder, salt, pepper, minced chipotle peppers, jalapeños, and roasted red peppers. Mix until the chicken is evenly coated and creamy.
  3. Preheat the oven to 325°F (165°C). Slice the slider rolls in half horizontally without separating them individually. Place the bottom half in a baking dish.
  4. Layer cheese slices over the buns, then spread the chipotle chicken mixture evenly across. Top with mozzarella cheese and pickles, ensuring full coverage for maximum flavor.
  5. Place the top buns over the filling and brush generously with melted butter and sprinkle parsley. Cover the dish with foil.
  6. Bake for about 20 minutes, or until the cheese is fully melted and the sliders are warmed through. Remove foil in the last few minutes if you want a lightly golden top.
  7. Slice and serve immediately while warm and cheesy.

Note

• Shredding the chicken finely helps it absorb more flavor from the sauce.
• Covering with foil keeps the sliders soft and moist while baking.
• Let them rest for a few minutes before slicing for cleaner servings.
• Add extra pickles for more tang and crunch.
• These are best served fresh out of the oven while cheese is still melted.
• You can prep the chicken mixture ahead of time for easier assembly.
