- Wash, peel, and cut the potatoes into large chunks. Place them in a pot of salted water and boil until completely fork-tender.
- Drain the potatoes well, transfer them to a bowl and let them cool. Mash until completely smooth, making sure there are no large lumps.
- Add the cornstarch, garlic powder, paprika, salt, and black pepper. Mix everything together until the mixture comes together into a soft dough. Scoop out small portions of the mixture and roll them between your palms to form smooth, bite-sized balls. Try to keep them roughly the same size so they cook evenly.
- Heat oil in a deep skillet over medium heat until it reaches approximately 350°F. Carefully place the potato balls into the hot oil in small batches. Fry them, turning occasionally, until they are golden brown and crispy all around.
- Transfer them to a wire rack or paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce and enjoy!

• Make sure the potatoes are well drained and cooled before mashing so the dough doesn't become too wet.
• If the mixture feels too soft, refrigerate it for 15–20 minutes before forming the balls.
• Keep the potato balls small so the outside becomes crispy while the center stays soft.
• Don't overcrowd the pan when frying, as this can lower the oil temperature and make the balls greasy.
• These are best served fresh while they're still warm and crispy.
