- Wash, peel, and cut the potatoes into large chunks. Place them in a pot of salted water and boil until fork-tender and soft.
- Drain the potatoes thoroughly and allow them to cool slightly. Mash until completely smooth with no lumps.
- Add cornstarch, garlic powder, onion powder, paprika, salt, pepper, and chopped parsley to the mashed potatoes. Mix well until a soft, pliable dough forms.
- Divide the mixture into equal portions and roll each into a smooth ball.
- Using a spatula or knife, gently press shallow vertical lines around each ball to create pumpkin-like ridges. Be careful not to cut all the way through.
- Heat oil in a deep pan over medium heat until hot.
- Carefully fry the shaped potato pumpkins in batches until golden brown and crispy on all sides.
- Remove and drain on paper towels to remove excess oil.
While still warm, insert a pretzel stick into the top of each piece to create a stem.
- Serve immediately with your favorite dipping sauce and enjoy.
