- Cut the broccoli crown into bite-sized florets. Bring a pot of salted water to a boil and cook the florets for 2–3 minutes, or until just tender. Drain thoroughly and allow them to cool completely. Pat dry with paper towels to remove any excess moisture.
- Crush the chips or crackers into coarse crumbs and place them in a shallow bowl. Set aside.
- In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, salt, and pepper. Gradually add water while whisking until a thick, smooth batter forms. The batter should be thick enough to cling to the broccoli without dripping excessively.
- Dip each broccoli floret into the batter, ensuring it is completely coated. Let any excess batter drip off, then roll the floret in the crumbs, pressing gently so the coating adheres well. Repeat with the remaining broccoli.
- Preheat the air fryer to 380°F. Arrange the coated broccoli florets in a single layer in the basket, leaving space between each piece for proper air circulation. Air fry for 7–8 minutes, or until the coating is golden brown and crispy. Work in batches if needed.
