  1. Preheat your oven to 390°F (200°C).
  2. Wash, peel, and cut the potatoes into evenly sized chunks. Place them in a large pot of salted water.
  3. Bring to a boil and cook for about 8-10 minutes, or until the potatoes are fork-tender but not falling apart.
  4. Drain the potatoes thoroughly and return them to the hot pot. Gently shake the pot several times to rough up the edges. This creates a starchy exterior that becomes extra crispy during roasting.
  5. Pour enough oil into a large baking dish to lightly cover the bottom. Place the dish in the oven and heat the oil for about 15 minutes until very hot.
  6. Carefully remove the hot baking dish from the oven. Add the potatoes and toss carefully until all sides are coated in the hot oil.
  7. Spread the potatoes into a single layer and roast for 1 hour, flipping every 20 minutes to ensure even browning and crispiness.
  8. While the potatoes roast, combine olive oil, minced garlic, lemon zest, herbs, salt, and pepper in a small bowl.
  9. After about 40 minutes of roasting, remove the potatoes from the oven and toss them with the garlic-herb mixture. Return them to the oven and continue roasting for another 15–20 minutes until deeply golden and crisp.
  10. Once fully roasted, carefully drain any excess oil.
  11. Transfer the potatoes to a serving platter. Drizzle lightly with honey, then sprinkle generously with grated parmesan and fresh parsley.
  12. Serve immediately while hot and crispy.
