  1. Wash the peaches and cut them into even wedges. Pat them dry with paper towels, especially if they are very juicy. This helps the flour and batter adhere properly.
  2. In a bowl, whisk together the flour, cornstarch, sweetener, and baking powder. Gradually add the cold water, whisking just until a thick, smooth batter forms. Don't overmix.
  3. Heat oil in a deep skillet over medium heat.
  4. Lightly dust each peach wedge in flour, shaking off any excess. Dip it into the batter, making sure it's completely coated.
  5. Carefully place the battered peach wedges into the hot oil. Fry in small batches, turning occasionally, until golden brown and crisp on all sides.
  6. Transfer the peaches to a wire rack to allow excess oil to drain and to keep the coating crisp.
