Crispy Cabbage Fritters

- To a large mixing bowl, add chopped cabbage, green chillies (if using), cilantro, all the spices, lemon juice, chickpea flour and rice flour. Mix well and carefully pour 2 tbsp of hot oil to make the fritters extra crunchy. Mix again.
- Let the mixture rest for 5-10 minutes until it starts releasing moisture. Using your hands, mix again until a sticky dough forms. If the mixture is too dry, add 1 tbsp of water at a time until it holds together. If the mixture is too sticky, gradually add 1 tbsp of chickpea flour and ½ tbsp of rice flour at a time until it reaches a dough-like consistency that holds its shape.
- Heat oil in a deep skillet over medium heat. Shape small portions of the mixture into fritters and fry in batches, flipping occasionally, until golden and crispy on all sides. Transfer to a paper towel-lined plate to absorb excess oil. Serve with your favorite dipping sauce and enjoy!
