- Add the softened cream cheese, chopped jalapeños, shredded cheddar, garlic powder, paprika, salt, and pepper to a bowl. Mix until everything is evenly combined.
- Scoop small portions of the mixture and roll them between your hands to form smooth, bite-sized balls. Place them on a parchment-lined tray. If the mixture feels too soft to shape, cover and refrigerate for about 15 minutes, or until firm enough to scoop and roll easily.
- In a bowl, whisk together the flour, paprika, garlic powder, salt, and pepper. Gradually add water while whisking until you have a smooth, thick but pourable batter.
- Dip each ball into the batter, allowing the excess to drip off. Immediately roll it in the panko breadcrumbs, gently pressing the crumbs onto the surface so they stick well. Repeat the batter and breadcrumb coating one more time for an extra-crispy coating.
- Place the coated balls on a parchment-lined tray and freeze for about 15–20 minutes. This helps the filling stay together while frying.
- Heat oil in a deep skillet over medium heat. Carefully place the balls into the hot oil in small batches. Fry until golden brown and crispy on all sides.

• Finely chop the jalapeños so they distribute evenly throughout the filling.
• Remove the jalapeño seeds and membranes for less heat, or leave some in if you prefer a spicier bite.
• Chilling the filling makes it much easier to shape into balls.
• Keep the balls small so they heat through quickly without the coating becoming too dark.
• Make sure each ball is completely covered in batter and panko to help prevent the filling from escaping during frying
• The short freezer time after coating helps the crust firm up before it hits the oil.
