Crispy Cheese Beignets

Servings: 3

Description

These Cheese Beignets are an easy savory snack that comes together with simple ingredients, doesn’t require much prep and gluten-free. They fry up golden and crisp on the outside while staying soft and airy in the middle, with plenty of cheesy flavor throughout. Serve them warm with your favorite dipping sauce for a quick appetizer, party snack, or side.

Ingredients

Instructions

  1. Add the water, butter, and sweetener to a medium saucepan. Heat over medium heat, stirring occasionally, until the butter has completely melted and the mixture is hot.
  2. Lower the heat and add the flour all at once. Stir vigorously with a wooden spoon or spatula until the flour is fully incorporated. It should become smooth and pull away from the sides of the saucepan.
  3. Transfer the dough to a mixing bowl and stir in the shredded cheese, salt, and black pepper until evenly combined.
  4. Allow it to cool for several minutes. It should be warm but not hot. Beat in the eggs one at a time, mixing thoroughly after each addition. The mixture may look separated at first, but keep mixing until each egg is completely incorporated before adding the next.
  5. Heat oil in a deep skillet or saucepan over medium heat, aiming for approximately 350°F.
  6. Lightly dip a spoon into the hot oil. Scoop a small portion of the batter and carefully drop it into the oil. Repeat with the remaining batter, working in small batches so the pan isn't overcrowded.
  7. Fry the beignets for approximately 2–3 minutes, turning occasionally, until puffed, golden brown, and crispy on all sides.
  8. Transfer the beignets to a wire rack or paper towel-lined plate to drain excess oil. Finish with freshly grated Parmesan and serve warm.

Note

• Let the cooked flour mixture cool slightly before adding the eggs so they don't scramble.
• Add the eggs one at a time and mix thoroughly after each addition.
• Dip the spoon in hot oil before scooping the batter. This lightly coats the spoon with oil and helps the sticky dough slide off more easily when you drop it into the hot oil.
• Keep the beignets relatively small so they cook through evenly while becoming golden on the outside.
• Avoid overcrowding the oil, as adding too many at once can lower the temperature. Keep the oil around 350°F for the best texture.
• The beignets are best enjoyed warm when the exterior is crisp and the inside is light and cheesy.
• Freshly grated Parmesan makes a delicious finishing touch.
