Crispy Potato Flowers

- Wash, peel, and cut the potatoes. Boil them in salted water for 10-12 minutes, or until fork-tender.
- Drain the potatoes thoroughly and mash until smooth (no lumps!). Add cornstarch, seasonings and parsley. Mix until well combined and a smooth dough forms.
- Roll out the dough to about 1.5-2 cm thickness. Use a flower-shaped cookie cutter to cut out the shapes.
- Heat oil over medium heat. Fry the potato flowers in batches, flipping occasionally, until golden and crispy on all sides. Transfer to a paper towel-lined plate to absorb excess oil. Serve with dipping sauce and enjoy!

• Make sure potatoes are fully drained and cooled down slightly before mashing to avoid excess moisture in the dough.
• Mash until completely smooth with no lumps for the best texture.
• Keep dough thickness even so the shapes cook uniformly.
