  1. In a large mixing bowl, combine the leftover rice, chickpea flour, sliced onion, chopped cilantro, garlic powder, ground cumin, paprika, salt, and yogurt. Mix thoroughly until all ingredients are evenly incorporated and the mixture begins to hold together when pressed. If the mixture feels too dry, add a small spoonful of yogurt. If it feels too wet, add a little more chickpea flour.
  2. Heat oil in a deep skillet over medium heat. Once the oil is hot, scoop small portions of the rice mixture and carefully drop them into the oil.
  3. Fry the rice bites in batches, turning occasionally, until they are golden brown and crispy on all sides, about 3–4 minutes per batch.
