Potato Pillows
Description
These potato pillows are a fun way to turn everyday potatoes into something the whole family can enjoy! They have a crispy exterior with a soft, fluffy center, and their little pillow shape makes them especially fun for kids. They’re simple to prepare at home and make a great snack, lunchbox addition, or side dish when you want something a little different from the usual fries or mashed potatoes.
Ingredients
Instructions
- Peel the potatoes and cut them into evenly sized chunks. Place them in a pot of salted water and boil until fork-tender. Drain thoroughly and let them sit for a few minutes so excess moisture can evaporate.
- Mash the potatoes until smooth, making sure there are no large lumps. Let them cool slightly, then add the cornstarch, salt, black pepper, garlic powder, and onion powder.
- Mix everything together until it forms a soft dough. If the mixture feels too sticky to handle, add a small amount of cornstarch at a time until it becomes easier to shape.
- Transfer the dough to a lightly dusted work surface and gently flatten it to an even thickness. Cut it into small squares using a knife or dough cutter. To shape the pillows, gently press each square with the tines of a fork, being careful not to flatten it too much.
- Heat oil in a deep pot over medium heat. Carefully add the potato pillows in small batches and fry until they develop a lightly golden, crisp exterior. Turn them as needed so they cook evenly, and avoid overcrowding the pot.
- Remove the potato pillows with a slotted spoon and transfer them to a wire rack. Let them cool briefly, season with a little extra salt if desired, and serve warm with your favorite dipping sauce.
Note
• Make sure the potatoes are drained really well after boiling. Excess water can make the potato mixture too soft and difficult to shape.
• Mash the potatoes until smooth so it is easier to shape and the finished texture is more consistent.
• Let the potatoes cool slightly before adding the cornstarch and forming the dough.
• Add the cornstarch gradually if needed. Different potatoes hold different amounts of moisture, so the dough may need a little adjustment. It should be soft and pliable without sticking excessively to your hands.
• Keep the dough an even thickness before cutting so the pillows cook at a similar rate. Press the fork gently into each piece to create texture without squashing it.
• Fry in small batches to avoid lowering the oil temperature too much. This helps the outside crisp up instead of becoming greasy.
