- Season the chicken cutlets with salt and pepper on both sides.
- Set up a breading station with flour, beaten egg, and breadcrumbs. Dredge each chicken cutlet in flour, then dip into egg, and finally coat thoroughly in breadcrumbs, pressing lightly so the coating sticks well.
- Heat oil in a skillet over medium heat. Fry the chicken cutlets until golden brown, crispy, and fully cooked through. Remove and drain on paper towels.
- In a separate pan, heat butter and oil over medium heat. Add diced shallot and minced garlic, sautéing until softened and fragrant.
- Stir in tomato paste and cook for 2–3 minutes to deepen the flavor and reduce acidity.
- Add a splash of water and stir, allowing it to simmer until slightly thickened.
- Lower the heat and mix in heavy cream, chili flakes, Italian seasoning, sugar, salt, pepper, and parmesan cheese. Stir until the sauce becomes smooth, creamy, and well combined. Remove from heat.
- Slice the baguette and lightly toast it until crisp on the outside.
