Instructions

  1. In a large bowl, combine the diced chicken with olive oil, garlic powder, oregano, paprika, cumin, lemon juice, salt, and pepper. Toss until the chicken is evenly coated and let it marinate for 15–30 minutes or overnight if time allows.
  2. Heat a large skillet over medium heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked and lightly golden on the outside. Remove from the heat and allow it to cool slightly.
  3. While the chicken cooks, prepare the tzatziki sauce. Grate the cucumber and squeeze out as much moisture as possible using a clean kitchen towel or paper towels. In a bowl, combine the cucumber, Greek yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper. Stir until smooth and well combined. Refrigerate until ready to use.
  4. Arrange the tortilla chips on a large serving platter or tray in an even layer. Scatter the cooked chicken evenly over the chips.
  5. Top with diced tomatoes, cucumber, Kalamata olives, roasted red peppers, pickled onions, and crumbled feta cheese.
  6. Add the tzatziki sauce generously over the top or serve it on the side for dipping. Finish with a sprinkle of fresh parsley.
  7. Serve immediately while the chips are crisp and enjoy.

Note

• Squeezing the cucumber well is essential for thick, creamy tzatziki.
• Marinating the chicken for longer gives it even more flavor.
• Assemble just before serving to keep the chips crunchy.
• Add extra feta and olives if you enjoy stronger Mediterranean flavors.
• For a spicier version, add sliced pepperoncini or a pinch of red pepper flakes.
• This recipe can easily be turned into a meal-prep bowl by serving everything over lettuce instead of chips.
