- Heat oil in a skillet over medium heat. Sauté onion and garlic until translucent. Add cauliflower rice, cook 2-3 minutes. Add black beans, seasonings, jalapeños, tomato paste and ¼ cup water. Simmer for 8-10 minutes until thickened.
- Place a large flour tortilla. Add filling at the center followed by salsa. Add crushed dairy-free nacho-style chips on top for a flavorful crunch. Layer with sour cream, guacamole, lettuce, tomato, red onion, and cheese.
- Place a mini tortilla on top. (Pro tip: If you don’t have mini tortillas, simply cut a smaller circle from a large tortilla). Gently fold the edges of the large tortilla toward the center, creating pleats.
- Place the Crunchwrap seam-side down in a greased skillet over medium heat and cook for 3 minutes per side until crispy. Repeat with the remaining Crunchwraps.
Note
• Cook the filling until thick so it doesn’t make the wrap soggy.
• Don’t overfill the Crunchwrap or it will be hard to seal properly.
• Place seam-side down first to help it hold its shape while crisping.
• Press gently while cooking for an even golden crust.
• Use crushed crunchy chips for the best texture contrast inside.
