Description

These Lemon Pepper Cheese Bites bring together two things that are hard to resist: crunchy fried cheese and a buttery lemon pepper sauce. Each bite has a crisp, seasoned coating wrapped around warm Swiss cheese, finished with a bright citrus kick and a little sweetness. They’re a fun snack for when you’re craving cozy, cheesy goodness with a flavorful twist.

Ingredients

For the Lemon Pepper Sauce

Instructions

  1. Cut the Swiss cheese into evenly sized, bite-sized cubes. Pat them dry with a paper towel if there is any moisture on the surface.
  2. In a mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. Gradually add cold water, whisking until you have a smooth batter that is thick enough to cling to the cheese but still flows easily. Place the Italian-style panko breadcrumbs in a separate bowl.
  3. Dip each cheese cube into the batter, letting any excess drip off, then roll it in the panko breadcrumbs. Gently press the crumbs onto all sides so the cheese is completely covered. For an extra crunchy coating, dip each piece into the batter and breadcrumbs a second time, making sure there are no exposed spots.
  4. Arrange the coated cheese bites on a parchment-lined tray and freeze for about 15 minutes to help the coating firm up before frying.
  5. While the bites chill, melt the butter in a small saucepan over low heat. Stir in the sugar or honey, lemon pepper seasoning, and lemon juice. Mix until everything is combined and the sauce is smooth. Keep it warm over very low heat without letting it boil.
  6. Heat the frying oil. Fry the cheese bites in small batches, turning as needed, until the coating is crisp and golden brown. This should take only a short time, so watch them closely to prevent the cheese from leaking out. Transfer the bites to a wire rack or paper towel-lined plate to drain.
  7. Place the freshly fried cheese bites in a large bowl. Drizzle the warm lemon pepper sauce over them and gently toss until coated. For the crunchiest result, add the sauce just before serving and toss only until the bites are lightly coated.
  8. Serve immediately while the outside is crisp and the Swiss cheese center is warm and melty.

Note

• Cut the cheese into similar-sized cubes so the bites cook at roughly the same rate and are easy to coat evenly.
• Keep the batter thick enough to cling to the cheese. If it is too thin, the coating may slide off; if it is too thick, the breadcrumbs may form a heavy layer. Add cold water gradually until you reach the right consistency.
• Make sure the cheese is fully covered with batter and breadcrumbs, including the corners and edges. Any exposed areas can allow the cheese to leak out during frying.
• The second coating helps create a sturdier, crunchier crust. Gently press the breadcrumbs into the batter so they adhere well.
• The 15-minute freeze helps firm up the coating, but avoid leaving the bites out at room temperature for too long before frying. If they soften while you're working, return them to the freezer briefly.
• Keep the oil around 350°F and fry in small batches. Oil that is too cool can make the coating greasy, while oil that is too hot may brown the outside before the cheese is warmed through.
• The lemon pepper seasoning can vary in saltiness and intensity by brand. Taste the sauce before adding extra salt, and adjust the lemon juice to your preferred level of tanginess.
• Toss the cheese bites with the sauce right before serving. Butter-based sauce softens the crunchy coating if left on too long, so use just enough to coat them without soaking them.
