  1. Cut the mozzarella cheese into thick rectangular sticks. Pat them dry if needed to help the coating stick better.
  2. In a bowl, whisk together flour, garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Gradually add water until a smooth, thick batter forms that can coat the cheese evenly without running off.
  3. Place breadcrumbs in a separate shallow bowl.
  4. Dip each mozzarella stick into the batter, ensuring it is fully coated. Then roll it in the breadcrumbs, pressing gently so the coating sticks well. For an extra crispy layer, repeat the batter and breadcrumb coating once more.
  5. Place the coated mozzarella sticks on a parchment-lined tray and freeze for at least 30 minutes. This step is essential to prevent the cheese from melting too quickly during frying.
  6. Heat oil in a deep pan to 350°F (175°C). Carefully add the frozen mozzarella sticks in small batches. Fry for 2–3 minutes, or until golden brown and crispy on the outside. Do not overcook or the cheese may leak out.
  7. Remove and drain on a paper towel-lined plate or wire rack.
  8. Serve immediately with warm marinara sauce and enjoy while the cheese is still gooey.
