Coffee Churros

- In a small bowl, combine the hot water and coffee until fully dissolved to create a strong espresso mixture. Set aside.
- In a saucepan over medium heat, combine the water, milk, prepared espresso, butter, and sugar. Stir occasionally and bring the mixture to a gentle boil.
- Once boiling, reduce the heat to low and add the flour all at once. Using a sturdy spoon or spatula, stir vigorously until the mixture comes together into a smooth dough ball and pulls away from the sides of the pan.
- Continue stirring for about 1 minute to cook off some of the excess moisture. Remove from the heat and allow the dough to cool until it is comfortable to handle.
- Transfer the dough to a piping bag fitted with a large star tip.
- Heat oil in a deep skillet or pot over medium heat. The oil should be hot enough that a small piece of dough sizzles immediately when added.
- Pipe long strips of dough directly into the hot oil, cutting the ends with kitchen scissors. Work in batches to avoid overcrowding.
- Fry the churros until golden brown and crispy on all sides, turning occasionally for even cooking.
- Remove the churros and place them on a wire rack to drain excess oil.
- In a shallow bowl, combine cinnamon sugar with a pinch of cocoa powder. While the churros are still warm, roll them in the mixture until fully coated.
- Serve immediately with mocha chocolate sauce, chocolate ganache, or your favorite dipping sauce.
