  1. In a bowl, combine 1 1/2 cups baking mix with 2 tablespoons melted butter. Use a fork to mix until the texture resembles coarse crumbs. Add more melted butter if needed until the crumbs reach desired size. For added texture, optionally mix in rolled oats. Set aside. You can also prepare the crumb topping ahead and store it in the freezer until needed.

  2. Preheat the oven to 350°F. Line a baking dish with parchment paper or lightly grease it.
  3. In a large bowl, whisk together the oil, water, and eggs until well combined. Gradually add the baking mix, stirring until a smooth batter forms. Tiny lumps are fine; avoid overmixing.

  4. Pour the batter evenly into the prepared baking dish. Generously sprinkle the crumb topping over the batter.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely. Optionally, lightly dust with blitzed healthy sweetener for a sweet finish. Cut into squares, serve, and enjoy!
